Healthy Crohn’s Friendly Chicken Recipe Overview
This meal features great tasting and juicy chicken, flavorful white rice, and the earthy sweetness of yams and yellow bell peppers. Not only is it easy to prepare, but it is also very healthful for people needing to take it easy with their body by using ingredients that will not aggravate symptoms of Crohn’s.
Healthy Crohn’s Friendly Chicken Recipe Ingredients
2 Chicken breasts. (This white meat chicken breast is a wise choice when preparing a chicken recipes for Crohn’s disease patients.)
Olive oil for the skillet (around 2 tablespoons)
½ teaspoon ground rosemary
½ teaspoon whole rosemary (fresh rosemary leaves are encouraged if available)
½ teaspoon Italian seasoning (3 parts oregano, 2 parts marjoram, 2 parts thyme, 1 part basil, 1 part rosemary, 1 part sage)
½ teaspoon salt
8-10 thin yam slices. Try slice the rounds about ⅛” to ¼” thick. Be careful and use a sharp knife when cutting, yams can be hard to slice.
½ yellow bell pepper sliced into strips
1 cup cooked white rice (extra-long grain or Jasmine make excellent choices)

Prepare the rice, cook in a rice cooker or per directions on the package.
Flatten the chicken breast either by hammering with a tenderizing mallet, or by butterflying with a sharp knife.
Mix all the spices together in a small bowl. You will use this seasoning for the chicken, as well as the yams.
Heat a large skillet on medium/high heat, add 1 tablespoon olive oil and let it get hot.
Season the chicken on both sides and place in the skillet. Reduce heat to medium and cook the chicken on both sides until cooked through. About 3 ½ – 4 minutes each side. This temperature/time combination yields a juicy tender chicken recipe for Crohn’s disease with a caramelized and crispy outside but tender inside.
When the chicken is cooked (internal temperature is 165 degrees – verify with a thermometer), remove from the pan and set aside for a minute.
Using the same hot skillet with all the tasty chicken drippings, add the cooked rice and sprinkle with the seasoning mix. Blend well and cook until hot, about 1 minute
Heat a skillet over medium heat. Add 2 teaspoons of olive oil and layer the pan with the sliced yams. Add about ¼ cup of water and cover for a few minutes to let the steam help soften the yams. Uncover, and continue to cook.
Add a little olive oil to the same pan and sear the peppers.
Sprinkle with the seasoning mix and continue to cook until slightly scorched. Remove from the pan.
