Ingredients for Red Bliss and Scallion Mashed Potatoes for Two:
2-3 Large red bliss potatoes
3-4 Scallions (also known as green onions) chopped, separated into white and green cuts as shown
Salt and pepper to taste
1 tbsp olive oil
1-2 tbsp cold butter, cut into cubes
1 Cup heavy cream, half and half, or milk (sour cream and yogurt also would work great in a pinch, just add a couple tablespoons of water and stir together well before adding)
Instructions for Red Bliss and Scallion Mashed Potatoes for Two:
Peel the red bliss potatoes of any blemished skin or flesh, leaving as much skin as possible. Chop into 1/2 in chunks and keep in cold water till you’re ready to cook.
Chop the scallions in small pieces (see chopping guide here), separating the white part from the greens. Set aside.
In a saucepan, heat 1 teaspoon of olive oil. Add the chopped white portion of the scallions. Sprinkle with a generous amount of salt and sauté a couple of minutes till fragrant.
Bring a pot of water to a boil with some salt. When the water boils (you see bubbles) gently lay the red potatoes in the water using a spoon to prevent the potatoes from splashing.
Drain the potatoes and add to the pan with the sautéed scallion. Stir to combine. Pour in fresh cold water to about 1/2 inch over the top of the potatoes and season with 1 teaspoon of salt. Bring to a boil then reduce to a simmer and cook for about 10 minutes.
Bring a pot of water to a boil with some salt. When the water boils (you see bubbles) gently lay the red potatoes in the water using a spoon to prevent the potatoes from splashing.
Once the potatoes are fork tender, meaning soft enough that a fork slides into the potato with ease, drain well in a colander and return to the pan. Warm on the stovetop over low heat.
Add a few cubes of butter and whatever creamy liquid you have decided to use to the pan. Mash your potato together with the melting butter and cream, until the potato is a silky-smooth texture. Season with the remaining butter, extra salt to taste, and some freshly cracked pepper if desired. Serve immediately garnished with scallion greens for an extra pop of color and zest.
