Cooking Directions for this Crispy Baked Potato Recipe:
Wash the potatoes under running water. The water temperature should be ambient, but not warm. When the potato is clean, use the fork to poke holes about ½” deep into the potatoes. This will help the potato to cook more even and allows the heat to penetrate the core of the potato. If you are using a larger potato, make the perforations slightly deeper. Preheat the oven to 400º.
Brush the potatoes with olive oil. A light coat is all you need. After having brushed them with oil the seasoning will stick better to the outside of the moist potato. At this point you can generously season with salt and pepper. If the potatoes are little or if you are using a medley potato the seasoning can be more light.
Bake the potatoes for 40 minutes, until their skin is crispy and interior is soft. You can rotate the potato after 20 minutes. If you are baking a rack full of potatoes adjust the cook time by extending it for a few minutes. If you are cooking fewer potatoes reduce the cook time by a few minutes. Make sure you poke the potato or slice one in half to ensure they are cooked through.
Cut an opening lengthwise in each potato, and add the seasonings of your choice. Dressings and seasonings that go well with this crispy baked potato recipe include sour cream, sliced scallions or parsley. You can drizzle some olive oil over them as well. Enjoy this with a protein of your choice.
In this potato recipe we used a Yukon gold potato. Other suitable types of potatoes include the red potato, the russet potato.
