How to Cook Skirt Steak on Stove Recipe
Skirt steak is a relatively inexpensive piece of meat that’s quick and easy to prepare and is high in macrominerals like phosphorus*. This recipe is great when you want a hearty meal with big flavor but are short on time. The chimichurri sauce acts almost like a dressing, removing the need for marination. Ingredients for this Pan Seared Skirt Steak with Chimichurri Sauce:
1 lb piece of skirt steak
1 tablespoon olive oil
Salt and pepper
¼ cup olive oil
2 tablespoons red wine, vinegar or lemon juice
¼ cup chopped fresh parsley
1 tsp red pepper flakes
½ teaspoon dried oregano
1 teaspoon salt

Cooking instructions for this Pan Seared Skirt Steak with Chimichurri Sauce:
Trim extra fat or rough cuts of meat from the skirt steak as you unroll it. If a portion of the steak is think separate it from the rest so it does not cook uneven. You can save the extra meat trimming to make your own ground beef. Sprinkle the steak with salt and pepper on both sides to season.
Heat the olive oil over medium heat in the skillet.
Add the skirt steak and cook for approximately 6-8 minutes on each side, till it turns golden brown.
Set aside.
Cover with foil to keep warm and let the meat rest.

Remember there are two different types of skirt steaks. There is inside and outside skirt steak. Inside skirt steak is more tender while the outside skirt steak has more connective tissue.
